Ingredients
- 1/4 cup butter, softened
- 1/2 a teaspoon of baking powder
- 1/2 cup sugar
- 1 egg
- 1 cup of Dannon® Plain Lowfat Yogurt
- 1/2 tsp. vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 bananas, diced
Directions
- Preheat oven to 400°
- Lightly grease 12 muffin cups or place 12 paper cupcake liners in muffin tin
- Beat butter, sugar and egg with electric mixer until fluffy
- Add yogurt and vanilla, and beat until smooth
- Combine flour, baking powder, cinnamon and salt in medium bowl
- Add flour mixture to yogurt mixture, and mix well
- Gently stir in bananas. Spoon batter into muffin cups, filling each one about 3/4 full
- Bake 20 minutes or until baked through
