Roasted Red Pepper Soup with Yogurt Pesto Swirl
Ingredients1 Tbsp. olive oil
1 large sweet onion, sliced (2 cups)
1 clove garlic, minced
1x 12 oz jar roasted red pepper
3 cups chicken or vegetable broth
1 x 5.3 oz pkg. Oikos® Greek 0% Plain (1/2 cup)
1 Tbsp. prepared pesto
DirectionsPrep Time: 15 minutes
Cook Time: 30 minutes
1. In a soup pot heat oil Add onions and sauté 4-5 minutes. Add garlic and cook 1 minute. Add red peppers and broth and bring to a boil. Reduce heat and simmer soup 30 minutes. Meanwhile combine yogurt and pesto until smooth.
2. Blend soup until smooth. Add 1/4 cup yogurt pesto to soup and mix well. Ladle soup into bowls and top each with a dollop of pesto yogurt and serve.
Yields1 qt. soup
