With the Passover holiday upon us, consumers will soon empty their pantries and refrigerators of all the "hametz," foods containing yeast, to make their homes Kosher for Passover. For many, the week of Passover can mean dry, tasteless food. But, the Dannon Company has created a solution with a line of Kosher for Passover products and three new, delicious and easy-to-make recipes for the Seder table and beyond.

BAKED APPLES WITH ORANGE VANILLA HONEY NUT FILLING

INGREDIENTS:
1 cup orange juice
4 Granny Smith apples or apples of choice
2 tsp. unsalted butter
2 tsp. honey
3/4 cup Dannon® Natural Flavors Vanilla Lowfat Yogurt
3 tbsp. chopped toasted walnuts or nuts of choice
1/4 tsp. grated orange peel

DIRECTIONS:
1. Preheat oven to 400 degrees. Pour orange juice into an 8-inch glass baking dish. Add apples that have been cored but not cut through the bottom. Place 1/2 teaspoon of butter and 1/2 teaspoon of honey into each apple. Put in the oven and bake for 40-50 minutes depending on desired consistency of apple.
2. Meanwhile add yogurt to small bowl; stir in 1 1/2 tablespoons of nuts and orange zest. Refrigerate until ready to use.
3. When apples are cooked, place each one into a shallow bowl. Divide yogurt mixture evenly and put into hollowed out apple. Spoon desired amount of orange juice mixture over apples with yogurt. Sprinkle with remaining nuts and serve immediately.

Yield: 4 servings (1 apple per serving)

HERB AND MATZOH MEAL CRUSTED SALMON WITH YOGURT HORSERADISH SAUCE

INGREDIENTS:
SAUCE:
1 cup Dannon® Plain Yogurt
1 1/2 tbsp. Dijon mustard
1 tbsp. horseradish
1 tsp. chopped fresh dill
FISH:
1/4 cup unsalted matzoh meal
1/2 tsp. chopped fresh dill
1/8 tsp. salt
TT* tsp. pepper
1/8 tsp. finely chopped garlic
3 tbsp. canola oil
4 (4 oz.) salmon fillets

DIRECTIONS:
1. In a small bowl, mix together yogurt, mustard, horseradish and dill.
2. In a medium size bowl, mix together matzoh meal, dill, salt, pepper, garlic and 1 tablespoon of canola oil.
3. Spread 2 teaspoons of yogurt sauce all over each piece of salmon, not putting any on the bottom with skin. Place each piece of fish, one at a time, into crumb mixture and coat fish.
4. Heat remaining 2 tablespoons of oil in a large non-stick frying pan on medium high heat. Add fish, skin side up and cook on each side for about 1 1/2 minutes or until fish is cooked to desired consistency and crumbs are browned.
5. Serve with remaining yogurt sauce.

LEMON VANILLA YOGURT WALNUT PASSOVER MINI MUFFINS

INGREDIENTS:
2 tbsp. canola oil + 1 tbsp. for greasing pans 3/4 cup Passover cake meal
1/2 tsp. salt
1/2 cup ground walnuts
1/2 cup sugar
1 tsp. grated lemon peel, or more to taste
3/4 cup Dannon® Natural Flavors Vanilla Lowfat Yogurt
4 eggs separated
36 large walnut pieces

DIRECTIONS:
1. Preheat oven to 350 degrees. Grease mini muffin pans. In a large bowl, add cake meal, salt, ground walnuts, sugar and lemon zest.
2. In a medium size bowl, add 2 tablespoons of oil, yogurt and egg yolks and whisk together. Add to cake meal mixture and mix well.
3. In a clean dry bowl, add egg whites and beat until stiff. Gently fold 1/4 of the whites into cake mixture to lighten; then fold rest of whites into mixture until just combined.
4. Spoon 1 tablespoon of mixture into each mini muffin pan, top with a piece of walnut and bake for 12-14 minutes or until knife inserted in the center comes out clean. Let cool for 10 minutes before removing from pan.

Yield: 36 mini muffins (2 muffins per serving)
