Chopped Salad


1 x 5.3 oz pkg. Oikos® Greek 0% Plain
1 Tbsp red wine vinegar
1 Tbsp low fat mayonnaise
2 Tbsp grated Parmesan cheese
2 Tbsp chopped parsley
2 hearts romaine hearts shredded (10-11 cups)
1 cup halved grape tomatoes
1 cup diced seedless cucumber
1/2 cup diced red pepper
1/2 cup minced purple onion
Salt and pepper to taste


Prep Time: 20 minutes
1. In a large bowl combine yogurt, vinegar, mayonnaise, parmesan and parsley, mix well.
2. Add remaining ingredients and toss to coat. Serve immediately w/ croutons if desired.
